For kata, frame the competitor's whole body from the judges' side at about chest height, so stances and kicks stay in the shot. For kumite, go a little wider and higher to follow the action across the area. A phone on a tripod works well, and pro crews can stream from OBS, vMix or an ATEM switcher over RTMP.

Keep early divisions free to grow your audience, then sell tickets for the black belt finals or grand championship as a separate event. You decide what is free and what is paid for every tournament.

Yes. Run the eliminations as a free event and the black belt finals or grand championship as a separate ticketed event. Ticketing is optional, so you can also keep the whole tournament free.
You set the price. A common approach is around $10 to $20 per day for all rings. Consider a lower price for in-house and local tournaments and a higher one for regional and national championships.
